Looking at foodborne illness

Foodborne illnesses are caused by ingesting microorganisms cause disease. These microorganisms are called pathogens and end up on food because of improper handling. Food that is contaminated is no longer safe to be sold or consumed by the public – but it happens. Food establishments slip up and it can cause someone to get sick. Most cases are self-limiting – meaning they resolve within a few days. However, symptoms of diarrhea and vomiting can persist and the victim will need medical management by then. More than two million people each year die from diarrheal complications – a dangerous statistic for a largely self-limiting disease.

This is why food safety is very important in food facilities and establishments. The food handling process has to be safe and sanitized to ensure that food that is sold or served to customers won’t make them sick. In Saskatchewan, The Food Safety Regulations under the 1994 Public Health Act makes food establishments responsible for training their entire staff in food safety and sanitation. It further requires a staff member trained in an local health authority-approved food safety course present at all times in the establishment.

Learning with Regina Food Safety Certification

Regina First Aid specializes in food safety training by offering FoodSafe courses all year-round. There are two levels (FoodSafe 1 is required for all FoodSafe 2 takers) available through the week. Both levels are certification courses – finish the course with complete attendance and pass all the exams and we will award you with a training certificate.

FoodSafe Level 1

  • Basic food safety and sanitation course
  • 8 hours long (either a single 8-hour or two 4-hour sessions)
  • Topics included – foodborne illness, basic microbiology, persona hygiene, housekeeping and sanitation
FoodSafe Level 2
  • Advanced food safety and sanitation course
  • 12 hours long (over two days)
  • Focus on management and planning
  • Targeted towards owners, managers, and supervisory staff
  • Topics included – facility  design, workflow planning, personnel training, health care permits and licenses
